Alpine Lakes Cheese began raising sheep to make cheese a number of years ago in the Leavenworth area. Catha, their cheese maker, grew up in Vermont crafting cheeses from dairy cows, and has transitioned to dairy sheep which produce a milk higher in fat and nutrients which makes a richer cheese with a mild flavor. Sheep cheeses you may already be familiar with include Percorino Romano and Roquefort Blue. The cheese made at Alpine Lakes Cheese are true Farmstead Cheeses. They are made from milk produced at the farm.
Cheese Making Classes
Catha is teaching beginning-to-intermediate cheese making classes from April thru October. The classes are hands-on, with a minimum of 3 people and a maximum of 8. A recipe booklet and cheese sampling included.
